Tuck smaller slices into any gaps to fill. Pour cream mixture evenly over potatoes, shake gently to allow all the gaps to fill with liquid and cover the dish tightly with aluminum foil. Bake potatoes until tender, (60–75 mins). Place rack in highest position; Change the oven setting to grill, remove foil and top potatoes with both cheeses. Grill until the cheese is bubbling and the top of the gratin is golden brown, (5–10 mins). Serve topped with more thyme leaves. Try adding various ingredients to level up your potato bake. Add the potatoes and peppers and fry, turning, until tender but not browned. Season with salt, lime juice and Sichuan pepper to taste. Peel the eggs and cut them several times lengthways, but don't cut all the way through. Heat the ghee and coconut oil in a large saucepan. Add the cumin, cloves, cinnamon, cardamom and bay leaf and stir-fry briefly. Add the onions and stir-fry for 2-3 minutes, then add the tomato and crush a little. Add the ginger and garlic pastes, potatoes, eggs, turmeric, ground coriander, pepper, chilli powder, garam masala, chopped herbs, paneer and a pinch of salt. Mix everything well.  Pour in 250 ml water and simmer the mixture for about 10 minutes. Add the drained rice, a little more salt and the lemon juice. Mix everything together and cook for about 5 minutes over a medium heat. Reduce the heat and cook for a further 10 minutes until the rice is tender. Meanwhile, peel and halve the red onion, then cut it into strips. Mix the yoghurt with a pinch of salt then mix in the onion strips and garnish with some coriander leaves.  Sprinkle the biryani with the remaining coriander leaves and serve with the onion yoghurt. - [Korean potato pancakes with spicy sesame dipping sauce](https://thegoodcarb.com.au/recipes/korean-potato-pancakes/): For the dip, toast the sesame seeds in a dry non-stick pan, shaking and turning frequently, until fragrant and starting to turn golden. Using a tablespoon, place 2-3 mounds of the potato mixture in the pan and flatten with a spatula. Fry until golden brown, then turn and fry on the other side until crispy. Repeat until all the potato mixture is used, keeping the cooked pancakes warm in a low oven. Rub liberally with olive oil and dust completely with Zaatar. 4. Lay 3-4 lemon rounds across the tops of the fish. 5. Place Salmon in the oven and cook for around 25 minutes or until the salmon is cooked to your liking. It should still be rosy pink in the center. Grilled Greens Method 1. Heat a skillet, BBQ or large frypan over high heat. 2. Toss your green through oil and place on your hot surface and allow to cook on one side until beginning to charr. 3. Toss or turn and cook on the other side for 1 minute before removing to a plate and sprinkling with chopped almonds. Optional Herby Oil Method 1. To make herb oil combine all ingredients in a mortar and pestle and gently crush and grind until the herbs and garlic have broken down into the oil. Check seasoning and set aside. Plating Tips Choose a large dish with raised sides. Layer mash, salmon, greens and almonds and finish with optional herby oil. Serve with lemon wedges. Zaatar (recipe credit www.feastingathome.com) 1 tablespoon dried thyme- crushed (or sub oregano) 1 tablespoon cumin (see instructions about whole or ground) 1 tablespoon coriander 1 tablespoon toasted sesame seeds 1 tablespoon sumac ½ teaspoon kosher salt ¼ teaspoon or more chili flakes- optional Method Mix all the ingredients together in a small bowl. Store in an airtight container. For the most flavor, toast whole seeds (cumin seeds and coriander seeds) until fragrant, then grind. This will make the most flavorful zaatar. Prepare the chocolate dip by adding the chocolate and butter to a small pan over very low heat and stir until smooth. Whisk in the cream until smooth and shiny. Dip each cooled cake into the choc mix about 2cm deep. After a couple of minutes flip the flatbread and allow to cook for a further minute or so until the bread puffs slightly and has some toasty spots. Once cool enough to handle, skin the capsicum and discard skin and seeds, keeping only the flesh. Slice or tear into lengths 2cm wide. Blend together together all of the dressing ingredients apart from the capers and dill. Set aside in the fridge. When ready to serve stir the feta through the dressing. Press one piece of foil into a large bowl. Fill this with the potatoes, spices, garlic, oil, preserved and fresh lemon and season. Toss the potatoes gently to cover in spices without tearing the foil. Place the second piece of foil over the top and roll top and bottom edges together to create a sealed pouch of potatoes. Place the pouch directly onto a hot grill, BBQ or pan and leave to cook for 10-15 minutes before flipping and cooking for 10-15 minutes on the other side. In the meantime combine all dressing ingredients well. For the fennel salad, remove the base and leaves of fennel bulb and shave fennel thinly. Toss fennel together with mint leaves. Check the potatoes are ready by creating a hole in the pouch using a skewer to release the steam. Carefully open it from one side. Potatoes should be caramelised and a skewer can be easily pushed into the flesh.
