Potato and Onion Soup with Bacon Dust

Serves 6 to 8

INGREDIENTS


  • 1 kg Carisma potatoes, peeled and diced
  • 2 tbs olive oil
  • 2 onions, peeled and diced
  • 2 cloves garlic, peeled and crushed
  • 2 sticks celery, chopped
  • 1.5L chicken or vegetable stock
  • 200g rindless bacon rashers

To garnish:

  • 4 tbs parsley, coarsely chopped or
  • 2 cups of kale, shredded or
  • 2 tsp of dill tips

INSTRUCTIONS


  1. Heat oil in a large saucepan.
  2. Add onion, garlic and celery, sauté for 5 minutes on low heat.
  3. Add potatoes and cover with chicken or vegetable stock.
  4. Bring to the boil and simmer for 15-20 minutes or until tender.
  5. Add parsley, kale or dill and cook until wilted.
  6. Process soup with a hand blender until smooth.
  7. To make bacon dust, preheat an oven to 200 degrees.
  8. Line a tray with baking paper and cook bacon rashers for 15-20 minutes until very crispy.
  9. Drain and cool bacon on kitchen toweling.
  10. Grind cooled and dried bacon into dust.
  11. Season soup with salt and pepper to taste, and bacon dust.
