Potato and Onion Soup with Bacon Dust

INGREDIENTS
1 kg Carisma potatoes, peeled and diced
2 tbs olive oil
2 onions, peeled and diced
2 cloves garlic, peeled and crushed
2 sticks celery, chopped
1.5L chicken or vegetable stock
200g rindless bacon rashers
To garnish:
4 tbs parsley, coarsely chopped or
2 cups of kale, shredded or
2 tsp of dill tips

INSTRUCTIONS
Print
Heat oil in a large saucepan.
Add onion, garlic and celery, sauté for 5 minutes on low heat.
Add potatoes and cover with chicken or vegetable stock.
Bring to the boil and simmer for 15-20 minutes or until tender.
Add parsley, kale or dill and cook until wilted.
Process soup with a hand blender until smooth.
To make bacon dust, preheat an oven to 200 degrees.
Line a tray with baking paper and cook bacon rashers for 15-20 minutes until very crispy.
Drain and cool bacon on kitchen toweling.
Grind cooled and dried bacon into dust.
Season soup with salt and pepper to taste, and bacon dust.
