Mini Pizzas

Cooking Time 25 minutes

Serves 4

INGREDIENTS


  • 2 large blue potatoes
  • 3 tbsp tomato paste
  • 100g ricotta cheese
  • 1/2 green capsicum, chopped
  • 1 tbsp dried mixed herbs
  • 1 tbsp parmesan cheese, grated

Red Potatoes

INSTRUCTIONS


  1. Heat oven and oven pan to 200°C.
  2. Cut potatoes lengthways into 1cm thick slices.
  3. Remove hot tray, line with baking paper and bake potatoes for 15 minutes. Remove from oven.
  4. Spread with tomato paste, then ricotta cheese.
  5. Top with capsicum, herbs and parmesan cheese. Bake for a further 10 minutes. Serve.

TIP: Have fun with the topping and use any ingredients you like.
