Soak 8 x 15cm skewers in water to prevent burning.
Place potatoes in a pot and cover with water. Bring water to the boil and cook potatoes until they are fork tender. Approx 10 minutes
Drain potatoes and allow to cool enough to handle.
Lay 2 potatoes side by side and wind a piece of bacon over one then under the other, secure the bacon and potatoes together with your skewer. Repeat with all the potatoes and bacon.
Place skewers on a baking tray, drizzle with olive oil and bake for 20 minutes, turning once at 10 minutes.
Sprinkle with paprika, salt and pepper.
TIP: Serve with aioli as a snack or as a side dish to a full meal.
