Golden Mash

Cooking Time 30 minutes

Serves 4

INGREDIENTS


  • 4 medium potatoes, unpeeled and diced
  • 1 cup diced pumpkin, peeled
  • 2 sage leaves
  • 100g Camembert cheese, diced
  • 10 ml warm milk
  • White pepper & nutmeg

Red Potatoes

ALSO GREAT WITH
Blue Potatoes

INSTRUCTIONS


  1. Boil saucepan of water with a steam basket and steam potato, pumpkin, and sage, with the lid on, for 15 minutes or until cooked through.
  2. Drain water and place potato and pumpkin in a saucepan. Return to stove on low heat to steam dry the potatoes for 2 minutes. Shake the pot to stop the potato and pumpkin sticking.
  3. Add the Camembert, warm milk and seasoning. Mash the mixture until smooth and creamy

TIP: Use any cheese you like to create your own flavour.
