Roast Potatoes with Fresh Herbs

2 to 4
INGREDIENTS
1kg Royal Blue potatoes, peeled and cut in half or quartered if extra large
2 cloves garlic, peeled
2 cloves garlic, finely chopped
1tsp oregano, finely chopped
2 tsp thyme, finely chopped
2 tsp rosemary, finely chopped
½ cup olive oil

Yellow Potatoes
INSTRUCTIONS
Print
Preheat oven to 280 degrees.
Place potatoes in a saucepan with 2 tsp salt and 2 peeled cloves of garlic.
Cover with water and bring to the boil.
Simmer for 10-15 minutes. Potatoes should be still firm.
Drain well.
Mix olive oil with chopped garlic, oregano, thyme and rosemary.
Coat potatoes with oil.
Roast potatoes for 30 minutes or until golden brown.
