Bronwyn Fox’s Roast Potatoes

Cooking Time 40 minutes

Serves 4-6


  • Approx 2 kilos of White Star potatoes
  • Olive Oil
  • Fresh rosemary
  • Salt and pepper

This recipe is from one of our growers – it is super simple and easy to adjust to your own quantities or flavours.

  1. Turn on oven to 200 degrees celsius and line a baking tray with baking paper
  2. Wash 5-10 potatoes – enough to fill your baking tray in a single layer
  3. Chop the potatoes into even chunks and put into tray
  4. Pour in a few globs of olive oil
  5. Grab some fresh rosemary and use to stalks to stir oil around the potatoes “smushing” the leaves into the tray to release flavour
  6. Pluck the leaves off the rosemary and  stir through with salt and pepper
  7. Pop in the oven for 30-40 minutes until golden brown (you might need to give them a stir half-way)
  8. Serve as a snack or side dish!

TIP: Make sure to really smush the rosemary around the pan for a couple of minutes to get the flavours into the dish
