You can’t beat a classic! Try our classic potato bake tonight – and be comforted by the creamy, warm deliciousness of potatoes, cheese and herbs.
Preheat the oven to 180°C
Cut 1 garlic clove in half and rub the cut sides all over the inside of a large (litre) shallow baking dish and follow by rubbing the room temperature butter evenly across the inside of the dish
Place the shallots, stock, cream, salt, ground black pepper, thyme leaves, and garlic cloves to a simmer in a saucepan over low heat until shallots and garlic are very soft, 15–20 minutes.
Cool slightly before transferring to a blender and blend to a smooth finish.
Arrange potatoes, in prepared dish, fanning out a handful at a time and placing in dish at an angle
Shingle sliced potatoes as you work until the bottom of the dish is covered. Tuck smaller slices into any gaps to fill.
Pour cream mixture evenly over potatoes, shake gently to allow all the gaps to fill with liquid and cover the dish tightly with aluminum foil.
Bake potatoes until tender, (60–75 mins).
Place rack in highest position; Change the oven setting to grill, remove foil and top potatoes with both cheeses.
Grill until the cheese is bubbling and the top of the gratin is golden brown, (5–10 mins). Serve topped with more thyme leaves.

TIP: Potato bake can be made 1 day ahead then brought to room temperature before grilling the cheese on the top prior to serving.
