Preheat the oven to 200 degrees Celsius
Slice 1 kg of potatoes into halves and then place in a pot of water
Season with salt and bring to a boil simmering for roughly 15 minutes
Once they are fork-tender remove them from the pot and strain
Place baking paper on a large sheet pan then drizzle with olive oil
Sprinkle one and a half cups of Parmesan cheese – spreading flat creating a thin layer on the baking paper covered tray
Sprinkle half a cup of chopped fresh Italian parsley over the cheese
Placed the potatoes face down on the Parmesan cheese creating a flat layer
Lightly drizzle olive oil over the top and then place into a preheated oven to 200° for roughly 30 minutes
Once the cheese has crisped up removed from the oven and allowed to cool and harden for 10 minutes
Place a chop chopping board over the top and then gently flip and remove the baking paper
Serve straight away
