Smashed Parmesan Potatoes by CheatMeats

Cooking Time 50 minutes

Serves 4-6 people

INGREDIENTS


  • 1-2 kilos of potatoes (you can make as many as you need)
  • Grated parmesan cheese - 1 tablespoon per potato
  • Olive oil
  • Salt

INSTRUCTIONS


Treat yourself to these simple but delicious Smashed Parmesan Potatoes made by CheatMeats – loaded with local goodness!

  1. Add potatoes to a pot of cold water and bring it to the boil
  2. Allow to boil for roughly 10 minutes until fork tender (best to check by piercing)
  3. Transfer the potatoes to a tray lined with paper towels and pat dry
  4. Score the top of the potatoes then place them on a lined sheet tray
  5. Smash the potatoes down until flat
  6. Lightly drizzle with olive oil and season with salt
  7. Place into a preheated oven set to 200 degrees for 30-40 minutes
  8. sprinkle parmesan cheese over the top of the potatoes and roast for a further 10-15 minutes
  9. Once they are golden brown remove from the oven and let sit for 5 minutes

TIP: Serve alongside your favourite steak, garnish with chopped fresh chives and enjoy straight away!
