INSTRUCTIONS
Turn leftover potatoes into this delicious and healthy lunchbox salad and stay full and nourished all day!
- Dice up potatoes, tomato, green beans, cucumber, onion, parsley and add into a bowl.
- Drain corn kernels and bean mix and add to potato mix.
- Sprinkle with salt and pepper and toss and place into a lunchbox.
- Add torn lettuce and keep the tin of tuna and the half lemon until lunchtime.
- Finish by opening the tin of tuna onto the salad and squeeze the half lemon for the dressing put lid back on and shake.
