Patatas Bravas

Cooking Time 45 minutes

Serves 6


  • 8 big blue potatoes
  • 1 whole garlic bulb
  • 1/2 red onion
  • 1 red capsicum
  • 1 spanish chorizo
  • Handful chopped parsley
  • Lemon
  • Summich Extra Virgin Olive Oil
  • 2 tbsp smokey spanish paprika
  • 1/2 tsp dried oregano
  • Salt & pepper
  • Pinch of cayenne pepper.

  1. Preheat oven to 230ºC. Wipe the potatoes clean (don’t wash).
  2. Cut them into cubes and place in a big bowl.
  3. Add a good lug of olive oil, the bravas spice mix and toss through the bowl.
  4. Cut the whole bulb of garlic in half, roughly chop the onion and add to the bowl.
  5. Clean out the seeds from the capsicum and roughly chop and add to the bowl.
  6. Slice the chorizo and place on the bottom of a baking tray.
  7. Give everything in the bowl a good mix. Check the seasoning.
  8. Lay the mix flat on the baking tray and place in the oven until the potatoes are cooked.
  9. Once cooked add some chopped parsley and mix, serve in little bowls or a big bowl with lemon wedges.

TIP: Much of the potatoes nutrients lie just under the skin so keep the skin on when you can.
