To make custard whisk eggs and sugar together in a small bowl, add cinnamon & nutmeg. In a small pot heat milk, cream and vanilla pod once warm slowly pour over egg mixture and stir until combined.
Butter bread on both sides, cut into random pieces and layer in an 8-inch baking dish while randomly scattering craisins and apples.
Pour over custard mixture and allow to stand for 10 minutes. Sprinkle top with brown sugar and place in oven for 30 minutes until golden brown and risen.
