Potato Nests

INGREDIENTS
15 blue potatoes, peeled, cooked and mashed
60ml milk
50g butter
1 egg
1.2kg low-fat beef mince
2 medium onions, finely chopped
2 cloves garlic, crushed
1 tbsp tomato paste
1 tsp dried basil
1x 400g can chopped tomatoes
1 tbsp gravy granules
Salt and pepper

INSTRUCTIONS
Print
Beat milk, butter and egg into the mashed potatoes and season with salt and pepper.
Place the mixture into a piping bag and pipe “nests” on a greased or non-stick baking tray.
Brown under the grill or in a hot oven until golden and keep hot.
In a large pan, fry the onions, garlic and mince then add all other ingredients and simmer for 20 minutes. Add some water if necessary.
Spoon the mixture into the nests and serve.
TIP:
Use any leftovers for Shepperd's Pie.
