Sasha’s Brat Kartoffel

Serves 2

INGREDIENTS


  • 4 Medium Potatoes (peeled and very thinly sliced)
  • 2 tbsp oil
  • 3 rashes of bacon (rind removed and cut into 2 cm squares)
  • 2 eggs

Blue Potatoes

ALSO GREAT WITH
Yellow Potatoes

INSTRUCTIONS


  1. Heat oil in a heavy based fry pan until hot.
  2. Layer potatoes in a pan and cook over a medium to high heat, flipping over potatoes until just crispy (not all potatoes will be crispy but that is ok – some will be nice and soft others crisp).
  3. Add bacon, flipping regularly until cooked.
  4. Crack in eggs, stir them through the potatoes and this will bind everything together.
  5. Remove from heat when eggs are cooked.
  6. Serve and eat well!
