The Perfect Crunch Chip

INGREDIENTS


  • 8 large royal blue potatoes
  • 3L vegetable oil
  • Sea Salt
  • Favourite dipping sauce

Yellow Potatoes

INSTRUCTIONS


  1. Steam whole royal blue potatoes for 18 minutes.
  2. Leave in the fridge to cool.
  3. Cut potatoes into 2cm chunks/wedges.
  4. Fry chips in a deep fryer at 140 degrees for 8 minutes.
  5. Place into the fridge to cool.
  6. Fry chips in the deep try again at 190 degrees for 3 & 1/2 minutes.
  7. Season with sea salt and serve with favourite dipping sauce.
