WA Potato Roses

  • 2 large potatoes, washed
  • 50g cheese
  • 1 egg, beaten
  • 2x sheets puff pastry
  • 8x slices rasher bacon (optional)
  • dried oregano or mixed herbs

INSTRUCTIONS


WA Potato roses – golden layers of puff pastry wrapped around beautiful local potatoes. The crispy golden edges and the warm, cheesy, melty centre are exactly what you want for the cooler months. These are always quick to disappear in our house, but they’re great for lunchboxes, a picnic spread, or as a side dish for your next Sunday roast.

  1. To prepare your potatoes, slice into thin discs using a mandolin or a vegetable peeler. Set aside.
  2. Spray a muffin tin with oil and preheat the oven to 190°C.
  3. Lay bacon on a baking tray and cook in the oven for 15 minutes to start the rendering and begin cooking. Remove from the oven and set aside.
  4. Cut each piece of chilled puff pastry into 4 even strips.
  5. Brush each strip of pastry with a little of the beaten egg and arrange a layer of overlapping potato discs onto the pastry. Make sure they are placed only halfway down so the pastry strip can fold over and secure to the potatoes.
  6. Cover the line of potatoes with herbs, grated cheese and a slice of bacon. Fold the pastry edge over and carefully roll each strip into the centre to create a rose shape.
  7. Place each rose into the muffin tin. Use the remaining egg to brush onto the tops of the potato and pastry. Sprinkle with any remaining cheese.
  8. Cook for 20 minutes or until golden brown and crispy.
  9. Allow to cool for 5-10 minutes. Remove from the muffin tray and serve.

TIP: These are great chilled the next day in lunchboxes too.
