WA Weekender Summer Sprout Potato Salad

Cooking Time 15 minutes

Serves 4

INGREDIENTS


  • 9 x Yellow potatoes, washed, cut into bite size pieces, with skin on
  • A good pinch of salt
  • A good crunch of black pepper
  • Snow pea tendrils
  • Sunflower tendrils
  • 1 ripe avocado, sliced with lemon juice
  • A good drizzle of WA Olive Oil
  • Sprouts

PERFECT WITH
Yellow Potatoes

ALSO GREAT WITH
White Potatoes

INSTRUCTIONS


  1. Steam potatoes until cooked through
  2. Cool in fridge
  3. Once cooled, place in large bowl then season with salt, pepper, olive oil
  4. Add in avocado, sprouts and toss gently
  5. Serve as a side salad
