Potato & Octopus Salad by Chef Scott Bridger

Cooking Time 30 minutes

Serves 4

INGREDIENTS


  • 1 kg kipfler potatoes, lightly scrubbed
  • 1 kg cooked octopus tentacles or 500gm pickled octopus
  • 1 head fennel, broken into pieces, reserving the fennel fronds
  • Salt

  • Nduja vinaigrette
  • 100gm nduja*
  • 2 garlic cloves thinly sliced
  • 50 ml Red wine vinegar
  • 1 tbsp paprika
  • 1 tspn honey
  • 150ml extra virgin olive oil

INSTRUCTIONS


This Potato & Octopus Salad with Fennel and Nduja Vinaigrette is the perfect side dish for your summer BBQ or any time of year. It is surprisingly quick to prepare with a few stand out ingredients making it a special summer dish to enjoy.

  1. Place the kipfler potatoes and the fennel into a pot a salted water and lightly boil for 30 minutes till both are tender.
  2. Leave to cool a little then cut the potatoes into small rounds.
  3. Cut fennel into similar sized pieces and arrange on a flat plate.
  4. Place the whole bag of cooked octopus into the hot water for 4 minutes till warm and tender or place the container of pickled octopus into the water to warm slightly.
  5. Warm a small pan and place the nduja and garlic into softly cook on low till broken up and fragrant
  6. Take of the heat and add the red wine vinegar, honey and paprika, season with salt and lightly mix in the olive oil.
  7. Remove octopus from the bag or drain the pickled octopus and cut into small rounds.
  8. Arrange the octopus over the cooked potatoes and fennel.
  9. Spoon over the Nduja Vinaigrette and garnish with the fennel fronds

 

 

TIP: Nduja is a spicy, spreadable, fermented pork sausage, known for its soft, pâté-like texture and chilli peppers.
